i finally found this long-lost and much-cherished recipe today, while obsessively sifting through old boxes of journals and notebooks from 1998ish. i found envelopes full of old collage remnants, essays written in italian that i can barely read anymore, packets of articles i loved, postcards and magazine pages. it was a nice way to lose a couple hours of the afternoon.



the most perfect vegan banana bread recipe
(from the farm cookbook)

1. sift together: 2 cups flour, 1.5 tsp baking powder, 1/2 tsp baking soda

2. cream until fluffy: 1/3 cup margarine, 3/4 cup brown sugar

3. beat into sugar: 1 cup mashed bananas

4. mix in: 3 tbsp soy milk or water, 1 tsp vanilla

5. fold in: 1/2 cup dark chocolate chips. bake 45-50 minutes at 350° in an oiled loaf pan.

i love this one primarily because it is dead simple! i rarely make fruit/veggie breads because the endless ingredients drive me crazy. especially the other vegan ones, which tend to have 12+ ingredients. not that i am vegan, but for some reason i dislike substituting eight ingredients for one egg, or something similar. you should try this one -- guaranteed awesome! though it must be mixed by hand :)
