Oct. 9th, 2004 07:29 amcolumbus day weekend, just like every year, is canadian thanksgiving weekend at my grandparents' house. yay! we are driving to connecticut in a little while, and bringing the mushroom wild rice casserole. it is long-grain dark wild rice (i used mille lacs minnesota rice) with long-grain white rice, mixed with a panful of sauteed mushrooms + celery + onion, with toasted/sauteed almonds and mushroom caps on top and baked until hot. i made it last night and hopefully it will taste even better today (like baked risotto!) because last night it seemed kind of bland :( more salt, maybe. it had 2 tbsp soy sauce in it, but i don't like the soy sauce flavor too dominant in this. it's supposed to taste more like rice stuffing.
i wish today were a little more autumnal--it's kind of bright and mild outside. oh well. happy canadian thanksgiving!
