i made quiche for the first time tonight, in a new tart pan (with removable bottom!) that i bought especially for this. (okay, maybe also for other nefarious dessert purposes.) it was so simple, could easily be made in a regular pie crust if you add a few extra eggs. click click click for the full recipe at flickr.

[ oh, i love those tart tins. is it a springform one, or just one with the removable base? geez, how sad is it that i even know the difference? have you ever made jamie oliver's chocolate tart? i think the recipe is in his first book ... which is the one you have, no? ... and it's really, really good. the quiche sounds yummy. except that i hate mushrooms. i know, i know. my mother berates me for this often as she loves them. she procured a big brown bag of swiss browns at the farmer's market this morning. ]

xo.

it has a removable base. i love it! next time i will make my own crust, too. today we just happened to have a leftover pie shell in the fridge, randomly.

i've never made jamie oliver's tart, i'll have to try it! and yes, that is the cookbook i have. i admit, i haven't gone looking in it for a while.

you don't like mushrooms!?! sad :( but understandable -- more for me! you know, this tart would be amazing with carmelized onions instead, or any number of things. i don't know that the mushrooms added any special flavor that's unreplaceable. do you have a tart tin?

I'm quiche queen! I make the most amazing quiches, for serious.

here's a tip. For chese, put spread it on the bottom before you put in the filling. THis will keep your crust flakey, as the cheese creates a pastry shield
