fiber, magnesium, selenium, phosphorous, potassium.

(for megan, who asked, and for myself as future reference. kirk & i eat mushrooms so often that it is often the first thing we pick up in the produce section. but i never knew what they were good for, besides tastiness. now i know!)

i wonder if that's from the old school of sympathetic herbal medicine (cf. nicholas culpeper), where colors/shapes of plants helped similar things (like a yellow flower would help with something to do with urin/the urinary tract, etc) -- on the vague resemblance of a mushroom to a circumcised penis? but then, that's only some kinds of mushrooms; the rest look like coral or weird flat disks, etc etc.

i think it depends so much on how they're prepared. grilled portobella is one of my favorites, but we rarely make it. most frequently, we use them in a quick stirfry, or sauteed to make a pasta sauce base.

i think the 'meat for vegetarians' thing is kind of bogus and overplayed -- it seems like an easy 'out' for stumped chefs who'd really rather have an all-meat menu. i guess mushrooms are versatile, sort of like meat, but still. i would imagine you're somewhat sick of seeing them endlessly promoted as the vegetarian entree!!

hehe, thanks for chasing this down! those are all really good vitamins for muscles (i.e. to avoid cramping).

i used to eat bananas when i would get a twitchy eye muscle (does that ever happen to you?), my mom always told me the potassium would help loads.

(though now i wonder how much potassium is lost if we cook the mushrooms? we never eat them raw.)

yep, that does happen to me. i always thought it was just due to stress and lack of sleep, though. hmm.
