fiber, magnesium, selenium, phosphorous, potassium.
(for megan, who asked, and for myself as future reference. kirk & i eat mushrooms so often that it is often the first thing we pick up in the produce section. but i never knew what they were good for, besides tastiness. now i know!)

Date: 2006-03-27 02:11 pm (UTC)i think the 'meat for vegetarians' thing is kind of bogus and overplayed -- it seems like an easy 'out' for stumped chefs who'd really rather have an all-meat menu. i guess mushrooms are versatile, sort of like meat, but still. i would imagine you're somewhat sick of seeing them endlessly promoted as the vegetarian entree!!
