i drank unhomogenized milk for the first time yesterday -- it was so delicious that this morning i was convinced i had only dreamt about its deliciousness. but i drank another glass and oh my god, so tasty.

when is the last time i was excited to drink milk? homogenization is dumb. if i have to pay $4.79 for a half gallon of milk in a glass bottle, i will.

something i learned yesterday: milk from a grass-fed cow will be a cream color (like the raw milk i used in my failed cheddar experiment), whereas milk from cows fed on corn or stored grains is generally white.

i wonder if you'd get the same flavor from a grass-fed skim, since the fat is already removed. i bought this 2% only because they promised me that the cream would rise to the top, which is something i'd heard about in fiction but never seen in commercial milk.

when I lived in england we had a farm deliver fresh raw milk to use daily. there was nothing so delicious in all the land! However, even when cows are treated nicely and there's no boiling, I don't think milk is good for us.

that cream top though...mmmmm

yum! i think i could give up milk easily (and do for weeks at a time when i forget to buy it) but it's the tastiness of cheese that i am much more fond of.

[ how intriguing. what does it take like, compared with the homogenised milk? creamier? unfortunately the idea of drinking a glass of milk makes me sick to my stomach. possibly because i had this awful experience as a kid where i drank a couple of glasses of milk and then promptly threw up. it's weird the way those sorts of experiences taint that particular foodstuff forever! i don't mind milk in other ways ... with cereal, or smoothies, or milkshakes, or whatever, but ... yeah. are there really strict laws in the US about the sale of unhomogenised milk? ]

it's hard to describe...it tastes creamier, a little sweeter, in general more complex. like the difference between a crappy fast food item and its equivalent at a pricey restaurant. i'm sorry you puked up milk -- yuck!

there aren't strict laws about selling unhomogenized milk, but it is extremely rare. i think it's just become normal, so no one questions it? do they have it in australia? here there are often state-by-state laws restricting the sale of raw milk (unpasteurized, unhomogenized) which makes it something of a black market item among the True Believers In The Power of Raw Milk (of which there is quite a growing community). often you have to say you're purchasing it 'for your pet' to get around the laws, so in practice it's not that hard. but in reality, you have to connect personally with farmers in order to buy it, so it's a lot of work. my connection (ha!) has a waiting list with a dozen people on it waiting to get on her weekly fresh milk delivery list -- so far i've only bought frozen from her. but then, i don't know what i would do with a gallon of fresh raw milk every week, so i haven't gone onto the permanent list yet :)
